At the moment I’ve been making soup out of veges from my garden…. real simple and yummier than it sounds and healthy as. Cook some onion and garlic in a pot with some oil (not too much, just so it doesn’t stick), add some chilli powder if you like it, or paprika, then add vege stock and water, and what ever veges you like. I’ve just been chucking in broccoli and spinach and silverbeet cause I have tonnes of it, but you can experiment with almost anything. A couple of potatos make it creamy. Make sure the water is only just above the veges, and then boil them until soft, then puree with a blender. Add salt and pepper to taste. Its really good with yummy bread on the side, but you don’t do gluten or can’t afford just have a bigger bowl of soup smile
I love google too to find recipes when I dont know what to do too, there are heaps of good sites out there!

there are some great websites out there… try searching google or hitting up the book store… amazon.com has a great book selection

This recipe isn’t meant to be a full meal i usually eat it with something else but its sooo good. You buy a pack of mixed frozen veges (or fresh ones- but the frozen ones are easier) then lightly cook them and add some soy sauce and oyster sauce (as much as you want- taste as you go, but be careful not to put in too much because its gonna be really salty otherwise) , then cook them for a bit longer and thats it!! its really quick. smile

that is a great way to cook vegies, gives them a really nice flavour, I also add to mine garlic smile

I’ve recently started buying pastry and making a refried bean pie. It can last for about a week, depending on how much you eat and you can put whatever in it smile

I buy a packet of orzo pasta. Cook add, wateva veges and some hummus or pesto and some pepper! Super cheat and tasty! Feeds 4

My favourite veg dish at the moment would have to be Ratatouille. And its real easy. Chop up onions, parsnip, courgettes and eggplant and capsisum in to small dices and lightly sweat off, when they are almost done add a scoop of tomatoe puree and salt and pepper to taste, yummy with pasta or a baked potato.

I love pizza but HATE meat on it. I make my own. You can use a sheet of pastry as a base, buy bases or make your own.
Then make your tomato topping with 1 can pureed tomatoes mixed with small can tomato puree and tsp sugar. (This mixture can be kept in fridge or frozen - should do 4 pizzas)
So:
1) spread on lots of the tomato mix
2) sprinkle of herbs and ground black pepper, some salt if you want
3) sprinkle of grated cheese
4) then whatever else you want…I use sliced mushrooms, sliced onion, chopped capsicum, thinly sliced courgette. Sometimes some sweetcorn kernels, olives (if I can afford !) and slices of tomato on top.
YUMMY
