Make your own energy bars

Recipe Ingredients

- 11/2 cups chopped mixed dried fruits, nuts and seeds (apricots, raisins, pineapple, pine nuts, pumpkin seeds, sesame seeds, slivered almonds – whatever takes your fancy)
- 11/2 cups rolled oats
- 1 cup wholemeal flour
- 1 teaspoon baking powder
- 1 egg
- ¼ cup canola oil
- ¼ cup brown sugar
- ½ cup apple juice

Recipe Instructions

1. Pre-heat the oven to 170c. Line a 20cm square cake tin with baking paper.

2. Mix all the ingredients in a bowl and press into the pan. Bake for 40 minutes or until golden. Leave to cool and cut into bars or squares.

Yummy! I’ve got all the ingredients in my cupboard, I’m so making this at the weekend.  It’d make a nice wee breakfast on the run too.
